Dry Wonton noodles with BBQ pork

Serves: 1


Ingredients:

  • 70 g Yunion Wonton noodles

  • 3 stalks Choy Sum or any Chinese green veggies

  • Pickled green chili

  • 5 slices Chinese BBQ pork


Seasoning for noodles:

  • 1 tsp light soy sauce

  • ¾ tsp dark soy sauce

  • ¾ tsp sweet soy sauce

  • 1 tsp garlic oil

  • ½ tsp sesame oil


Instructions:

  1. Add all ingredients for seasoning (except water/chicken stock) onto a plate and set aside.

  2. In a pot, blanch Choy Sum stems in boiling water (add a little cooking oil into the water for a glossy look of the Choy Sum) for about 30 seconds followed by the leaves for about 10 seconds. Remove with a large strainer and set aside.

  3. Bring water to a boil again. Add Wonton noodles into a noodle strainer and place it inside the pot. Cook for 15 seconds or slightly longer till the noodles is done to your liking. Loosen the noodles with a pair of chopsticks.

  4. Remove the noodles and place them in a bowl of cold water. After the noodles are cooled down, return them to the pot for 5 to 10 seconds just to warm them up.

  5. Put the noodles onto the plate with seasoning. Toss the noodles till evenly coated with the seasoning.

  6. Garnish noodles with blanched choy sum and sliced BBQ pork and serve with pickled green chilies.
