Fried gyoza, also known as potstickers, are deliciously crispy on the outside and juicy on the inside. Here's a recipe for making them at home:
Ingredients:
For the filling:
- 250g ground pork (or chicken, turkey, or shrimp)
- 2 cups finely chopped cabbage
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon minced ginger
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
For assembling:
- Water for sealing
For cooking:
- 2 tablespoons oil (vegetable or sesame oil)
For dipping sauce (optional):
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon finely chopped green onion (optional)
Instructions:
1. In a large mixing bowl, combine the ground pork, chopped cabbage, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly distributed.
2. Take a dumpling wrapper and place about 1 tablespoon of the filling in the centre of the wrapper.
3. Dip your finger in water and moisten the edge of the wrapper.
4. Fold the wrapper in half to form a half-moon shape and pinch the edges together to seal. You can also make pleats along the edge for a decorative touch and to ensure a tight seal.
5. Repeat with the remaining wrappers and filling until all the dumplings are assembled.
6. Heat 1 tablespoon of oil in a large non-stick skillet over medium-high heat.
7. Once the oil is hot, arrange the dumplings in the skillet in a single layer, making sure they are not touching each other.
8. Cook the dumplings for 2-3 minutes, or until the bottoms are golden brown and crispy.
9. Carefully add about 1/4 cup of water to the skillet and immediately cover with a lid. Steam the dumplings for 5-7 minutes, or until the filling is cooked through and the wrappers are translucent.
10. Remove the lid and continue cooking until the water has evaporated and the bottoms of the dumplings are crispy again, about 2-3 minutes more.
11. Transfer the cooked dumplings to a plate and repeat the cooking process with the remaining dumplings, adding more oil to the skillet as needed.
12. To make the dipping sauce, simply mix together soy sauce, rice vinegar, sesame oil, and chopped green onion in a small bowl.
13. Serve the fried dumplings hot with the dipping sauce on the side.
