Simple Chicken and Vegetable Hokkien Noodle Stir-Fry

Ingredients:

  • Chicken Marinade: 

    • 125 grams chicken fillet, cut into bite-sized pieces

    • 1/2 teaspoon garlic powder

    • 1/2 teaspoon salt

    • 1/2 teaspoon black pepper

    • 1/2 teaspoon light soy sauce

  • Stir-Fry:

    • 500 grams Yunion Hokkien noodles

    • 3 tablespoons cooking oil

    • 2 large eggs, beaten

    • 50 grams mushrooms, sliced

    • 1 tomato, cut into wedges

    • 1/2 red capsicum (bell pepper), cut into thin strips

    • 1-2 stalks choy sum, cut into bite-sized pieces

    • 1 red chili, thinly sliced

    • 1 spring onion, finely sliced

    • 3 cloves garlic, sliced

    • 1/4 onion, cut into wedges

  • Sauce:

    • 1/2 teaspoon oyster sauce

    • 1/2 teaspoon sesame oil

    • 1 teaspoon sweet soy sauce

    • 1 teaspoon chicken powder

    • 2 teaspoons fish sauce

    • 1 teaspoon Chinese cooking wine (optional)

    • 6 tablespoons water


Instructions:

  1. Marinate the Chicken: In a bowl, combine the chicken pieces with garlic powder, salt, pepper, and light soy sauce. Mix well and marinate for 30 minutes to 1 hour.

  2. Prepare the Sauce: In a separate small bowl, combine the oyster sauce, sesame oil, sweet soy sauce, chicken powder, fish sauce, Chinese cooking wine (if using), and water. Mix well and set aside.

  3. Cook the Chicken and Aromatics: Heat 2 tablespoon of cooking oil in a large wok over medium-high heat. Add the onion wedges and sliced garlic, and stir-fry for 1-2 minutes until fragrant. Add the marinated chicken and stir-fry until cooked through. Remove the chicken, onion, and garlic from the wok and set aside.

  4. Scramble the Eggs: Add 1 tablespoon of cooking oil to the wok. Pour the beaten eggs into the wok and cook, stirring gently, until scrambled.

  5. Combine Chicken and Eggs: Return the cooked chicken, onion, and garlic to the wok. Stir well to combine.

  6. Add Vegetables: Add the sliced mushrooms, spring onion, choy sum, tomato wedges, sliced capsicum, and sliced red chili to the wok. Stir-fry for 2-3 minutes or until the vegetables are slightly softened.

  7. Add Noodles and Sauce: Add the Hokkien noodles and the prepared sauce mixture to the wok. Toss everything together thoroughly.

  8. Finish Cooking: Continue to stir-fry until the noodles are heated through and all the ingredients are cooked to your liking. Serve immediately.
